Chef Wayne has dominated the Best of the Valley's Southern/Cajun food category for 11 straight years, and it's no wonder, with dishes like mouth-watering jambalaya, Chicken Etouffe and of course The Big Mamou: Shrimp and crawfish in a lobster brandy cream sauce with mussels, broccoli and yellow squash over rice with puff pastry. Moderately priced drinks (available only at the Williamsburg location) include the Category 5 (pineapple, orange and cranberry juices, grenadine and five kinds of rum), and Cajun Iced Tea (tequila, kahlua, sour mix, cranberry juice and Bacardi Limon). Chef Wayne and his staff promise a Cajun-style good time to any and all who come in.
