At Paul and Elizabeth's, where vegetarian and natural cuisine is thoughtful and elegant, meal-sized salads made with locally grown ingredients when possible are a favorite. Lemon-seasoned tabouli salad, sea vegetable salad with marinated tofu and a house salad with roasted red peppers and onions are examples of what's to be had at this anchor of Thornes Market, where freshness and beauty of presentation make diners feel pampered with every dish. Paul and Elizabeth's has been a mainstay for vegetarian cuisine in Northampton for 32 years. Working with local farms, and currently using up their store of winter root vegetables, they're eagerly looking toward the new growing season. In addition to serving fine vegetarian fare and seafood, they also bake their own bread and desserts. Their cream pies and chocolate mousse are particular favorites.
