Last year, Onyx Fusion Bar and Restaurant came in third place in this category, but that was before they hired Rick Greco as their beverage director. A former manager for the Ruby Tuesday restaurant franchise, Greco had left his job to return to school for a graduate degree in chemistry when he was approached by the Springfield restaurant. Even for non-martini drinkers, his concoctions look and sound amazing. Along with a standard menu, Greco is constantly improvising and creating new seasonal variations, such as last fall's hit, the Apple Pie Martini. He starts with non-alcoholic ingredients and builds his unique drinks around them, and for a final trademark touch, instead of ice cubes, he uses dry ice for its dramatic smoke, fizz and pop. Greco is quick to include his bar staff in the reasons for the restaurant's success: "They're great about consistent presentation, which isn't easy with the high volume of customers we serve."
