Debbie and Dave Windoloski, who bought Carmelina's at the Commons in Hadley a few years ago because they had enjoyed dining there, constantly calibrate the balance of old and new in their menu to keep the restaurant popular, and it's working. Examples: a pasta, chicken and sausage dish, Crazy Alfredo, that was a hit during the time of the previous owner is still offered, but a few weeks ago wine dinners and a mead tasting were introduced. An unusual attraction at this restaurant, long considered one of the finest in the Amherst-Hadley area, is that you can order your choice of fish and your choice of preparation, rather than being limited to the stated method of preparation for each fish dish.
