Pate and escargot are the only items that remain on the menu at Chez Albert in Amherst throughout the year. Paul and Amy Hathaway change their menu four times a year with the seasons, taking advantage of the local produce. Currently, they're planning their spring menu; they're excited about the return of the Amherst farmers' market, and about being able to ease off potato and cabbage-based meals and introducing ingredients such as peas, sprouts and morel mushrooms into the mix.
